Meatloaf Madness


I try to make a few recipes in bulk every few weeks, and freeze them for upcoming dinners. Last week, Kenzie and I spent one evening making 6 meatloaves (part ground beef, part turkey). We ate one that night for dinner and froze 5 for future dinners. She was a great help and we had fun doing this together. While we were cooking the boys went to the hardware store to get a few things. I am so glad God has blessed me with a daughter to share my joy of freezer meal cooking.


I have a little tip to share about freezing meatloaf. For years I lined the loaf pan with foil, putting the meat mixture in and then wrapping the meatloaf in more foil, then put the foil-wrapped meatloaf in a ziploc (that is how my freezer meal cookbook taught me to do it -lol).

We used to have trouble getting the foil out of the meatloaf in order to cook it (it would stick in the corners). At one point I decided to try simply placing the ziploc in the loaf pan and then shaping the meatloaf in the pan and then pressing the air out of the bag.
Then I remove the bag from the pan and make the next meatloaf. This saves me lots of time and the cost of the foil (best of all, no more bits of foil in the meatloaf!)
